As the world navigates this new normal, we take the opportunity to celebrate some of the most amazing destinations and the people who make those places so special. In their own words, on-site partner specialists and hoteliers will offer glimpses into their lives and new routines, and share the special recipes that bring their families together.
In times of uncertainty, I am proud to be part of a community that embraces difference, celebrates authenticity, and works passionately to connect people from all over the world. It is my pleasure to share some of these characters with you!
First Stop: Italy!
“During this period of long quarantine our life is changed a lot – from very busy days we jumped into being home and we had to invent new routines.
Personally I am taking care to prepare home made food (Italians in this are very talented), doing some indoor gym, reading books everyday, watching movies on TV. Luckily I live just outside Florence, in the countryside and I can enjoy daily walks in the country, breathing fresh air.
The focus is to remain calm and positive and use this time to think of new projects and ideas and scout new partners to be ready for the re-start of our normal life. The rest of Essence of Italy team is doing the same – we try all to get positive energy and to use this time for us and for our families!”

My recipe for sweet moments during the isolation: Apple Cake.
APPLE CAKE
Ingredients (you may need to convert metric units to US measurements):
3 big sweet apples ( green/yellow color)
300 gr flour
16 gr of baking powder
150 gr white sugar
3 eggs
100 gr of butter
100 ml of milk
1 pinch of salt
1 yellow lemon zest
Directions:
Cut 1 apple and half in small cubes and the rest of the apples in slices. Melt the butter ( should be liquid).
Mix together the eggs with sugar reducing at a cream. Add the butter and the milk and mix again. Slowly, add the flour, the pinch of salt, the baking powder and mix together. Add at the end the apple cubes and the lemon zest and mix again.
Put the mixture in a round baking tin and cover the top with the rest of the apple slices ( decorating and covering completely) and put in oven at 180°C for 50/60 minutes max. It will be ready – you can add apart a ball of vanilla ice cream if you have it which is a plus!
