As the world navigates this new normal, we take the opportunity to celebrate some of the most amazing destinations and the people who make those places so special. In their own words, on-site partner specialists and hoteliers will offer glimpses into their lives and new routines, and share the special rituals and routines that bring their families together.

Next Stop: Ballyfin Demesne, County Laois, Ireland
One of the most amazing places, Ballyfin is a world within itself. With a glorious history that includes a painstaking, nine-year restoration, Ballyfin regains its throne as one of Ireland’s most lavish country retreats. Reigning over a sprawling 614-acre estate dotted with follies and grottoes, this 20-bedroom Regency manor house has been authentically refurbished, from the Chippendale mirrors right down to the antique mosaic floors. Food is sourced from the garden and local farms; guests may even pick their own fruit or collect eggs. Activities range from falconry and fishing the tranquil lake to enjoying cooking demonstrations and whiskey tastings in the cellar.
In moments like these, it is ever so important to think positive. As a new dad, I focus a lot on family time, something that is rare in our industry at times. I find it is also a time to remember time spent with family and friends, look at old pictures and reminisce of places that we visited that marked us. Finally I find it is also a time to dream and think of places we can one day visit – when it is safe to do so!

Damien’s Chocolate Chip Cookies
Ingredients
· Butter – 150g
· Sugar – 80g
· Brown Sugar – 80g
· Salt – ¼ tsp
· Plain Flour – 225g
· Baking Powder – ½ tsp
· Eggs – 1 large
· Vanilla Essence/extract – 2 tsp
· Chocolate chips – 200g
Lightly cream butter sugars together, next add your eggs and vanilla, one egg at a time whilst mixing. Combine flour baking powder and salt together, add this mix to your wet mix, then add chocolate chips.
Roll with cling film do a desired size, refrigerate, and cut, alternatively, just spoon mix onto baking tray spaced apart and cook at 170C (338 F) for 6 to 8 minutes.
