In this time of unprecedented global events, people around the world are coming together—from a distance!—to connect and encourage one-another.

As the world navigates this new normal, we take the opportunity to celebrate some of the most amazing destinations and the people who make those places so special. In their own words, on-site partner specialists and hoteliers will offer glimpses into their lives and new routines, and share the special rituals and routines that bring their families together.

In times of uncertainty, I am proud to be part of a community that embraces difference, celebrates authenticity, and works passionately to connect people from all over the world. It is my pleasure to share some of these characters with you!

Anchored by Casa Grande, an elegant historic mansion, restored to its 1900s grandeur, the 26-room property comprises more land than many national parks. Accommodations range from luxuriously furnished bedrooms to private cottages, and our solar-powered, high-country Costilla Fishing Lodge. Expert guides create tailored outdoor excursions based on your interests and skill level, and our chefs prepare mouthwatering meals that begin in our greenhouse and local farms and are inspired by the land and seasons.

At Vermejo, social distancing is giving us the chance to spend lots of time in the great outdoors enjoying the same types of activities our guests do, hiking, biking, fishing, and since it’s spring, searching for shed antlers the deer and elk are leaving behind. 

While we love sharing these beautiful landscapes and experiences with guests, friends, and family, and can’t wait to get back into the swing of a busy season, this unique solo and couple time is helping us to slow down, appreciate the beauty that is in our backyard, and reconnect with the nature in our souls.

Vermejo’s Famous Trout Salsa

Trout Salsa

  • 1 tablespoon olive oil

  • 1 shallot, minced fine

  • 1 garlic clove, minced fine

  • 1 trout fillet, small dice

  • ½ large tomato, small dice

  • 1 teaspoon lemon juice

  • ½ jalapeño, seeded and diced (or leave out of you prefer)

  • 2 tablespoons chopped pecans, or another favorite nut

  • 1 tablespoon adobo sauce for heat (or leave out)

  • Salt and pepper to taste

    INSTRUCTIONS In a hot sauté pan, add olive oil, shallots, and garlic and sauté for a few minutes, add trout and sauté until mostly cooked, about 1 minute, add tomatoes, jalapeño, and sauté 1 minute, add lemon juice and adobo sauce, toss and add salt and pepper, top with pecans or favorite nut.

    Serve with tortilla chips!
